RV cooking: When company comes to dinner, we serve pizza on the grill

While staying at Fort Flagler near Port Townsend, we had an impromptu dinner party and it was so much fun.

I texted our kiddo's BFF, who lives nearby, and invited Izzy to the campground for a visit. She and her boyfriend, Asa, were happy to swing by and I asked them if they wanted to stay for dinner. Heck yeah, she said.

It was no big deal to expand on the menu I already had in the works: Tortilla pizza on the grill. We've had this savory treat before and love it because it's so easy and so tasty. 

If you're going to go the DIY route, prep all the toppings and set them up near the grill. Crank that heat up to high and crisp the flour tortilla on one side before flipping and arranging the toppings on the crispy side. We had Italian sausage, shiitake mushrooms, artichoke hearts and a blend of Italian cheese. 

On the table, we had a tossed green salad and a modified caprese: mozzarella balls combined with cherry tomatoes and homemade pesto. I heaped the greens and caprese on top of my finished tortilla and ate it taco style. Yum! 

We enjoyed the food, but especially loved having company to share in the experience of the outdoor meal.
