When listening to music while dining, what’s your top food and beverage choice?
“Now that I’m a diabetic, I really have to watch my diet. Any dish with lots of veggies would be fine. Maybe a big chef’s salad that includes avocados. Add some blue cheese dressing and a glass of wine, and that would be just right.”
If you could create a candy bar with a special taste, what would it be?
“Man, that’s easy: Butter Pecan Ice Cream. They make some really tasty sugar-free ice creams these days, and that’s my favorite flavor.”
How about a meal from your childhood that you’ll always remember?
“I ran away from home once when I was a child, and hardly had any money with me. I was starving, and went up to a woman standing on her porch. She was so kind, and brought out a fruit jar filled with buttermilk along with some biscuits. I still think of that act of kindness today.”
B.B. King’s Special Chef’s Salad
6 cups chopped lettuce
1 1/2 cups chopped smoked turkey breast
3 hard-cooked eggs, chopped
6 slices bacon, crisp-cooked, drained and crumbled
1 1/2 cups chopped smoked ham
3 ounces sliced medium Cheddar cheese
3 ounces sliced Swiss cheese
2 medium tomatoes, cut into 1/6 wedges
1 medium avocado, halved, seeded, peeled and cut into wedges
6 ounces corn bread croutons
Place lettuce on 6 individual plates. Evenly divide meats, eggs, cheeses and bacon among plates, place evenly on top of the lettuce. Place avocado and tomato wedges on the outer edge of the plate, then top off with croutons. Serve with blue cheese dressing. Makes 6 servings. Adjust ingredients to meet specific dietary needs.
