Baking tip: pan size

Do not choose a different pan size than the recipe calls for (don’t substitute an 8-inch for a 9-inch, and vice versa).

The timing (and test to see if baked goods are done) is based on specific bakeware dimensions. Some pans have dimensions printed on the bottom.

If yours doesn’t, use a ruler to measure the inside diameter across the top of the pan.

Pans for 8- or 9-inch round layers should be at least 1 1/2 inches deep; squares and oblongs should be 2 inches deep.
