Bottles launches next to Rocket
The popular Rocket Bakery is branching out.
The Spokane-based company, in partnership with two of its employees, has launched a separate venture called Bottles, a free-standing wine shop that also carries specialty beers and soda pops. It’s located alongside the company’s Millwood bakery.
The new partnership was prompted by the success of the downtown Spokane Rocket Bakery beer and wine section added a few years ago and because part of the bakery building in Millwood stood empty.
“We tried to apply here everything we learned building up the downtown wine and beer section,” said Brian Kovacich, Bottles co-owner and general manager of the Rocket Bakery Co. “Our goal here is to have some unusual offerings along with recognizable items and at competitive prices … with the neighborhood (market) aspect.”
Bottles partners also include bakery owners Jeff and Julia Postlewait, Gilbert and Mariann Davis and Kovacich’s wife, Lynne.
Before opening Bottles on May 12, the nearly 1,000-square-foot retail site underwent some cosmetic changes that included grinding and sealing a cement floor and new paint in earthy greens and plums. A bar for wine tastings also was added.
Kovacich says Bottles carries about 1,000 wine labels, including those from Washington and from across the globe, and about 100 micro- and craft brews.
The partners, who are currently taking turns working at the store, will help customers research and order difficult to find wines. They also plan to schedule wine tastings and they ensure Bottles maintains an unstuffy attitude.
“Education and entertainment is a big part of the retail side,” said Kovacich. “There are so many wineries and so many grapes in production that there are a lot of opportunities for some fun and unique stuff.”
