Haitian Night
Chef Lesa leads the class in making three dishes from Haiti, starting with the mother sauce, a Hirshon seasoning paste filled with spices. Next will be Haitian Joumou soup filled with squash and warm spices. Last dish will be Hirshon Haitian griot pork, a dark caramelized pork dish with the mother sauce and served on basmati rice.
