Chef Lesa leads the class in making three poke dishes, starting with Lomi Lomi salmon poke with rice, cucumber, grapefruit and a shoyu dressing. Next is an ahi tuna poke with coconut, rice and corn with the final dish is a sweet poke with mango, papaya , coconut rice and lime.
