Chef Lesa leads the class in making a chicken puff, curried chicken and potato baked in puff pastry with a chutney. The next dish is a Malabar Chemmeen curry with fresh prawns, warm spices and coconut cream. For dessert make Nei Payasem, a pudding made with rice, ghee, rose syrup and cashew.
