Better Brittle
Anoka means “windswept” in the Colville Indian language. And Anoka Farms, where Shelly Smith’s grandparents used to live, got its name from a Colville trading trail that once crossed the Pleasant Prairie property on the way to Spokane.
Today, Smith uses the Anoka name and her grandmother’s recipe to produce peanut brittle in four varieties: original, chocolate-dipped peanut, an espresso version called “EspressoH!” and white gold (also known as “brittle bark,” pictured here).
It’s one bark that’s definitely worth a bite.
