Fresh Potato Consumption Edges Higher

In 1961, Americans consumed an average of 81 pounds of their potatoes fresh and 9 pounds of them frozen.

Last year the figure was 49 pounds fresh, 59 pounds frozen.

But domestic demand for fresh potatoes has been trending ever so slightly upward since 1990.

Idaho shipped 33.2 million 100-pound sacks of fresh potatoes from the 1995 crop. That was nearly as much as the next three states - Colorado, Washington and Wisconsin - combined.

Overall per capita potato consumption is up from 106 pounds in 1960 to 128 pounds in 1990 and 142 pounds in 1996.
