Americans flip more burgers on the grill than anything else, but several new cookbooks offer broader horizons for outdoor cooks.

“The grill (offers) a lot more possibilities than people give it credit for,” says Chef Jamie Purviance, author of “Weber’s Real Grilling,” which shows how to make everything from appetizers to desserts on the grill.
