Wild Game Feast includes 5-course meal by CdA Inn chef

Attendees at the North Idaho College Alumni Association’s eighth annual Wild Game Feast next Saturday will enjoy wild game delicacies rarely available to the casual diner.

This year’s event features a five-course meal created by Coeur d’Alene Inn Chef Gene Tillman, designed to provide attendees with a unique culinary experience.

A social will begin at 6 p.m. and the four-course dinner will be served at 6:45.

The menu features a Northwest cheese and fruit display, braised elk and jalapeño sausage in sweet Guinness and honey and caribou meatballs in a spicy garlic tomato coulis for starters. A buffalo oxtail soup with Idaho lentils and a mixed winter greens salad with Granny Smith apples, candied walnuts, bleu cheese crumbles, sweet craisins and a poppy seed vinaigrette will be served. The main course features pan-seared, bacon-wrapped quail breast paired with Jack Daniel’s peppercorn kangaroo medallion. It will be served with pesto mashed potatoes and vegetable garni.

The entree will be followed by the final course, a dessert of espresso chocolate flourless cake with chocolate ganache and raspberry coulee.

A special wine selection will be available with dinner in addition to a no-host bar.

Beth Paragamian, wildlife education specialist for the Idaho Fish and Game Department, Idaho Panhandle National Forest and Bureau of Land Management, will help provide the atmosphere of the event with taxidermy displays of hoofed taxidermy animals in settings resembling their natural habitat.

The event will also include a silent auction for items such as a luxury yacht cruise complete with dinner on the lake, gift baskets, fine wine and more. Classic guitar music will be provided by NIC alums Andy Booth and Mike Volk.

The event will be at the Coeur d’Alene Inn at 414 W. Appleway. Tickets are $55 per person or $50 for NIC Alumni Association members. Limited seating is available. All proceeds benefit the NIC Alumni Association and scholarships for NIC students.
