Think Salt Is All The Same?
Here are the various types of salt available:
Table: Fine-grained with additives that allow free flow.
Iodized: Table salt with sodium iodide added to thwart hypothyroidism (goiter).
Kosher: White, additive-free, coarse-grained with large, irregular crystals. An equal measure has half the saltiness of regular table salt. Use twice as much in cooking.
Sea: Grayish. Made by evaporating sea water and removing impurities. Stronger in taste than table salt.
Pickling: Fine-grained and additive-free for pickle and sauerkraut brines. Iodized salt clouds the brine and makes pickles soft.
Fine: Tiny, almost powdered granules that adhere well to snack food. Used on popcorn.
Rock: Less refined but food-grade salt. Gray. Used as a bed for baked oysters.
