Frozen Vegan Meals Are Actually Good

There are many evenings when even I just can’t bear cooking, especially after preparing food for hundreds of people all day at work. Typically, fast food and prepared meals are not vegetarian friendly, which makes life difficult.

I’ve tried just about every meatless pizza, filled pocket and frozen dinner I could find during the past few months. Then I discovered Cascadian Farm Meals For A Small Planet, a line of frozen meals made in Rockport, Wash., (near Mount Baker) that you merely heat in the microwave or in a skillet. They taste good, contain only organic ingredients, are vegan (contain no dairy products or eggs) and low in fat.

They come in 16-ounce bags in such flavors as Cajun with basmati rice, red beans and spicy seasonings; Indian curry with chickpeas; Aztec with wheat berries and corn; and, my favorite, Moroccan made with wheat and raisins.

Look for them in the frozen food section of natural food stores.
