Fit As Fennel

Some sugary, gooey restaurant desserts make you feel like running right out and brushing your teeth.

But after a few bites of the fennel cake from Sprouts Fresh Cafe in Spokane, you’ll feel like you’ve already brushed.

The spongy cake includes slivered almonds and just enough fennel seed to create a cleansing, licorice-like flavor without being overpowering.

Cafe co-owner Marla Emde calls it “a rendition from an old Italian cookbook that I made healthy.” Healthy enough, at 235 calories per slice (25 percent from fat), to make The Heart Institute of Spokane’s “Lite ‘n Hearty” list.

Price: $1.50 per slice.
