Seafood Alfredo A Quick Meal
Need a quick fix? Seafood Alfredo can be prepared in 30 minutes or less. Use 1 pound scallops, medium shrimp or bite-size cubes of swordfish, tuna, salmon, halibut or shark. Speed preparation by using bottled Alfredo sauce with mushrooms. Top the finished dish with grated Parmesan cheese.
Seafood Alfredo

8 ounces fettuccine
1 pound scallops, medium shrimp (peeled and deveined) or bite-size cubes of swordfish, tuna, salmon, halibut or shark
2 cups fresh broccoli florets
1 cup frozen peas
3 tablespoons red bell pepper, chopped
1 (17-ounce) jar Alfredo sauce with mushrooms
Grated Parmesan cheese, for garnish
Place fettuccine in a large pot of boiling water. Cook 9 minutes, stirring occasionally.
Add shrimp, scallops or fish, the broccoli, peas and peppers; stir. Cook 2 to 3 minutes or until shrimp are pink and pasta is cooked. Drain well.
Return to pot. Stir in Alfredo sauce, stirring gently but well. Transfer to a serving dish and serve with grated Parmesan cheese.
Yield: 4 servings.
