Easter Colors You’Ll Dye For

Rick Bonino Food Editor

FOR THE RECORD: 4-1-99 Wrong channel: The Discovery Channel’s “Fabulous Fish Friday” will air Friday from 10 a.m. to 5 p.m. on TCI Cable Channel 9 in Spokane. The channel number was listed incorrectly in Wednesday’s IN Food section.

Blue? Boring. Green? Gauche. Red? Been there, dyed that.

If you’re looking for some fresh new hues for your Easter eggs, the McCormick/Schilling food- coloring folks have a few suggestions.

For some snazzier shades, just mix together one-half cup of boiling water, one teaspoon of vinegar and the following combinations of colors:

Jade: 17 drops green, 3 drops blue.

Teal: 15 green, 5 blue.

Lime: 24 yellow, 4 green.

Grape: 17 blue, 3 red.

Watermelon: 25 red, 2 blue.

Cantaloupe: 24 yellow, 2 red.

Maize: 24 yellow, 1 red.

Spearmint: 12 green, 6 yellow, 2 blue.

Raspberry: 14 red, 6 blue.

Purple: 15 blue, 5 red.

Plum: 10 red, 4 blue.

Fuchsia: 18 red, 2 blue.

Orange Sunset: 17 yellow, 3 red.

Jungle Green: 14 green, 6 yellow.

Fish fry-day

For those of you observing Lent, Good Friday can get even better with a new fish recipe or two.

On Friday from 10 a.m. to 5 p.m., the Discovery Channel (TCI Cable Channel 28 in Spokane) will air 14 episodes of its “Great Chefs” series featuring innovative fish preparations.

“Fabulous Fish Friday” segments include visits to two Portland restaurants, the Heathman Hotel at 10 a.m. and Westmoreland Bistro at 3 p.m.

Going Dutch

Elsewhere on the tube, Grangeville, Idaho, cookbook author C.W. “Butch” Welch, a former conservation officer with the state Fish and Game Department, has begun an eight-part public television series on outdoor cooking with Dutch ovens.

The program includes tips on outfitting a camp kitchen and some of Welch’s trademark “tall tales.” Look for it Saturdays at 10:30 a.m. on KUID Channel 12 in Moscow and KCTD Channel 26 in Coeur d’Alene.

Smoke and chokes

And speaking of al fresco cuisine, the Weber Grill-Line officially opens for its sixth season tomorrow. Call (800) 474-5568 weekdays between 6 a.m. and 4 p.m. to ask a cookout question or request a free copy of Weber’s “Beyond Burgers Barbecue Booklet.”

Also available in April is a new toll-free help line on how to use artichokes from Ocean Mist Farms in Castroville, Calif. It operates Monday through Saturday from 7 a.m. to 6 p.m. at (877) 937-2465.

(We’d make a lame joke here about cooking artichokes on the grill, but we’ve tried it, and they’re actually quite good.)
