The discovery one year ago this month of the nation’s first case of mad cow disease at a dairy farm in Washington state could have been a disaster for the beef industry.

But it wasn’t. The episode did little to dampen consumers’ enthusiasm for beef. In fact, consumer confidence in the nation’s beef supply rose in the months after the announcement.
