Your box lunch is on the way
Students at Spokane Community College’s Inland Northwest Culinary Academy are up to their elbows right now in box lunches.
The school volunteered again this year to help prepare more than 4,000 lunches to support the Spokane Child Abuse Prevention Box Lunch Day. The proceeds benefit Support, Care and Networking for Families and the Children’s Home Society of Washington.
Julie Litzenberger, who teaches front-of-the-house techniques at the school, said when they made lunches last year the bags of chips alone needed a whole banquet room. Not to mention the space it takes to store 700 pounds of sliced turkey. The lunches include a Northwest turkey club sandwich or grilled vegetable wrap, pasta salad, fruit, chocolate chip cookie and bottled water.
The $10 lunches were presold and will be delivered to workplaces around the city Thursday.
Parker starts business
One of the finalists in The Spokesman Review’s Cooking Expo is taking her expertise to a new level.
Lesley Parker, along with her husband Jim and her sister Peggy Kotur, has started A Little Taste of Heaven. When they say heaven, they mean heavenly sweet treats. Their specialties include classic coffeecakes, imaginative cheesecakes (including a White Russian Cheesecake that is drizzled with a yummy Kahlua cherry sauce) and an assortment of other goodies. They make Mudslide Brownies and Chocolate Almond Biscotti. Parker also can make a giant, cookie pizza topped with chocolate chips, marshmallows, pecans and Reese’s peanut butter cups for those who need a serious fix for their sweet tooth.
The menu changes seasonally (although they can make anything you request from a previous menu) and they offer delivery in the Spokane, Spokane Valley, Medical Lake and Cheney areas with a small charge to help cover gas costs.
Parker and clan also are in the process of taking over the Bite Me Cafe, 113 W. Indiana Ave. They plan to open Scalawag’s in May after some interior remodeling and menu revamp. They’ll be serving breakfast and lunch, including salads, soups and an assortment of daily specials.
Parker was the second place winner in this year’s Flavors of the Inland Northwest recipe contest at the Cooking Expo with her Stuffed Salmon Fillets with Huckleberry Salsa. To celebrate its 10th anniversary it has introduced Epi to Go, a new program that allows users to download recipe from its database of more than 20,000 recipes directly to mobile phones and PDA. Simply click the “send to my phone” button on any one of the recipes. It is compatible with any Web enabled phone. The free service allows consumers to view a complete list of ingredients … no more shopping lists.
