Chickens have heard better news
Farm-fresh chicken is now on the menu in Spokane. Thanks to a new mobile processor, Gary Angell of Rocky Ridge Ranch recently delivered 50 fresh broiler chickens to Luna restaurant that had just the day before been pecking and scratching in his pasture.
“There is something about a farm-fresh chicken that you just can’t duplicate,” says Angell. “I would equate the breast on one of these broilers to be as good as lobster.”
The birds were slaughtered on the farm and delivered to the restaurant where Chef Shilo Pierce served 20 of them as a special menu item. They were so well-received that Angell says Pierce was already making plans to serve the rest and ordering more. .
The mobile processor was made possible by an effort by the WSU Stevens County extension office. It will help area farms and ranches get farm-fresh produce to local markets, Angell says.
Angell also will sell the birds at the Spokane Farmers’ Market, with a minimum order of 10 broilers. The market is held Wednesday and Saturday from 8 a.m. to 1 p.m. on Second Avenue between Division and Browne.
Community catering
Davide Trezzi and his wife, Stephanie, heard about the beauty of Green Bluff from friends, and when they visited they knew it was home. So, they uprooted their 12-year-old catering business from Sonoma County, Calif. to bring it here.
Five months ago, they landed in The Barn at Trezzi Farm and they are introducing themselves to the community. The barn is actually the Trezzi’s house.
Davide Trezzi originally hails from Milan, Italy, and specializes in country Italian cooking and what he calls “community catering.”
He offers a simple, affordable menu that community and nonprofit groups can use for fund-raising events. Schools, churches, law enforcement, small grass-roots organizations and other nonprofits made up his client list in California. The largest event the Trezzis catered was the MS Bike-a-Thon “Waves to Wine,” with 1,700 guests.
“Our food is very simple really, but it is so affordable and the quality is so good that people will enjoy it,” Davide Trezzi says.
He learned traditional Italian recipes from his mother and has added some of his own over the years.
The Trezzis also offer menus for weddings, receptions, holidays, office lunches and the like. They serve the Spokane and Coeur d’Alene area.
They’ll be introducing their offerings at the Liberty Lake Farmers Market on Saturday and the Moran Prairie Farmers’ Market on Sunday.
