Students recycle, deliver meals
The Campus Kitchen at Gonzaga University has honored its first class of culinary students.
Six people graduated last week from the new training program at the kitchen which turns unused campus meals into food for the needy.
The Campus Kitchen project is a student-driven program in which high school and college students recycle unserved food from dining services and use school cafeterias to prepare meals for low-income youth, seniors, families and community agencies.
The Campus Kitchen at GU delivers meals to nine local groups and 29 homes. Since it was started in August 2005 students have rescued 13,500 pounds of food and served more than 10,000 meals, according to a news release. The Campus Kitchen is a partnership between Gonzaga and Sodhexo, the campus food-service provider.
The eight-week culinary job training program is designed to prepare students to work in area restaurant and other commercial kitchens.
One of the features of the class was the weekly participation in the local Avista community garden. Students tended the garden with senior gardeners and used the fresh produce in their culinary lessons, the news release said.

Recipes will be judged on their taste, originality, visual appeal and adherence to category description.
Final judging will take place at the Allrecipes.com test kitchen in Seattle, where the company is based.
