Kopplin’s cake lights up contest
Spokane Community College baking instructor Marcel Kopplin placed first in a recent national cake decorating competition with her Tiffany lamp cake.
Kopplin, who has been with the bakery department at SCC for 21 years, competed against contestants from a dozen other regional bakery associations last month in the American Bakery Expo in Atlantic City, New Jersey.
The competition was held in front of a live audience at the tradeshow. Kopplin competed in several categories, including flowers and sprays with borders, wedding cakes, rolled fondant, custom cake designs and sculpted cakes.
Her Tiffany lamp cake was awarded a gold medal and a $200 prize, which will benefit the SCC bakery program.
Kopplin is the owner of Marsells Cakes and Desserts in Spokane.
Maggie’s on the menu at Cena
The make-and-take meal specialists at Cena are featuring local restaurants on their menu.
During November, Cena clients can choose the Chicken Pot Pie from Maggie’s South Hill Grill among the menu items. The dishes are assembled in the Cena kitchen and then taken home and frozen for later preparation.
The Chicken Pot Pie is described as “tender chicken in a creamy broth, topped with delicate and flaky puff pastry.”
Cena will be featuring dishes from other restaurants in coming months. During December, the Twigs Bistro Chicken will be available. The roasted chicken breasts are topped with sun-dried tomato, pancetta, artichoke hearts and garlic pan sauce.

Eat yer split peas, please
The USA Dry Pea and Lentil Council will donate yellow or green split peas to restaurants next week in exchange for putting split pea soup on the menu.
Yep, it’s national Split Pea Soup Week and the pea and lentil council wants to boost the reputation of the economical split pea.
Split peas are rich in folate and fiber and an excellent source of protein, according to the council.
