Surprise your sweetie with scrumptious s’mores

Swap a few ingredients or tuck something surprising into a traditional s’more and you’ll have something that lives up to its name, says cookbook author Lisa Adams.

She suggests a stack of scrumptious variations in her new book, “S’mores: Gourmet Treats for Every Occasion.”

Here is her simple recipe for a Sweetheart S’more:

Sweetheart S’More

We all love a box of chocolates on Valentine’s Day, but it’s even better to share a s’more with your sweetie, Adams writes.

1 filled gourmet chocolate of choice (preferably soft centered)

1 graham cracker, broken in half

1 marshmallow

Arrange the chocolate on half of the graham cracker and melt. (Place the graham cracker over indirect heat on a fire or grill, but watch to make sure the cracker doesn’t scorch.)

Once the chocolate begins to melt or glisten, remove graham cracker from heat and top with roasted marshmallow (see note) and remaining graham cracker.

Or, assemble your s’mores – omitting the top graham cracker – on a cookie sheet and pop into a preheated 350-degree oven for 4 to 6 minutes.

Note: Marshmallows can be roasted in the traditional way over coals or flames. Adams also suggests “roasting” a marshmallow in the microwave, by cooking it for 7 to 10 seconds. “They will lack the slightly crisp texture of their golden-brown cousins. But they will be puffy and soft, and just fine for a quick treat. (Don’t heat marshmallows longer that 10 seconds, or they will get immensely sticky and rubbery.)”
