Taste of Nashville
Chef Timothy Grayson recently traveled to Nashville where he sampled a bunch of Southern-style cooking.
Hot chicken, pineapple cobbler and black-eyed pea salad were among his favorite dishes. He wrote about his restaurant visits in Sunday’s Travel section. Today, he shares recipes inside the Food section on Page C3. Look for reviews of a couple of Southern-style cookbooks, too.
Cocktails for dinner
Santé Restaurant and Charcuterie is hosting an “Eat What You Drink” food-and-cocktail pairing event.
The $100 seven-course dinner takes place Monday night at 5:30. Dinner is served at 6 p.m. Call (509) 315-4613 for reservations. Santé is located at 404 W. Main Ave.
Chocolate Souffle
Learn to make this elegant, decadent dessert from Santé pastry chef Lynnette Pfluegger.
Tuesday night, she’ll present recipes for the souffle as well as creme anglaise and candied pistachios. Techniques include whipping egg whites, cooking custard and candying nuts.
The class costs $39, is limited to 16 participants and starts at 5:30 p.m. at the Kitchen Engine, 621 W. Mallon Ave., Suite 416. Call (509) 328-3335.
The Chocolate Affair
The Coeur d’Alene Downtown Association is looking for participants for its sixth annual chocolate fest.
The event runs from 5 to 8 p.m. Feb. 13, and there are three divisions: professional, nonprofessional and people’s choice. There’s no cost to participate, but professional chefs and home cooks will have to make samples.

Holeshot Pizza and Brew
A new brick-oven pizza place is slated to open this spring in the food court in River Park Square.
Holeshot will serve pizza by the slice as well as entire pizza pies and salads. Decorations will reflect the owner’s passion for off-road motorcycle racing. In motocross, a holeshot is the first rider to make it through the first turn, or the one with the strongest start in a race.
The restaurant will also feature an adjacent beer and wine bar called The First Turn. Owner Kevin McRae is a 20-year resident of Spokane.
