Fresh Sheet: Coffee Roboto crowdfunding effort underway

It’s not too late for coffee drinkers to back a new mobile espresso business.

Husband-and-wife owners Young and Michal Bennett have about a week left for their Kickstarter campaign to fund Coffee Roboto. Donations go toward start-up expenses – such as brake pads, ingredients, cups and lids – as well as marketing materials and an espresso machine.

Slated to operate out of a 1979 Ford E-350 truck in Coeur d’Alene, Coffee Roboto plans to feature coffee beans from Doma Coffee Roasting Co. in Post Falls, where Young Bennett worked for four years. He plans to offer a minimalist menu of classic espresso drinks in 8 and 12 ounces, drip coffee, cold brew and shrub sodas.
