The Perfect Polenta - Easy

Making polenta from scratch can drive you stir crazy. Traditional recipes for the Italian cornmeal mush call for it to be cooked and continuously stirred for up to an hour.

Thankfully, a few varieties of premade polenta in a plastic tube are available in supermarket produce and deli sections, ready to be baked, fried or grilled.

One of the better brands, Melissa’s (pictured here), comes in three flavors: original, wild mushroom and sun-dried tomato. Top with pasta sauce and some grated cheese, and you just might find yourself crazy about it.
