Fish With Fresh Lemon Perfect For Light Summer Evening Meal

Lemons, lemons, lemons. Fresh lemons were part of my family’s memorable Memorial Day weekend.

We traveled to Santa Barbara, Calif., for my youngest brother’s wedding. My parents and six of my nine brothers and sisters came for this sacred and festive occasion.

The car ride from Los Angeles was both scenic and interesting. Our girls looked for the golden arches of McDonald’s. I exclaimed about the beautiful coastlines and contrasting fields of fruit. Endless strawberry fields, ripe for the picking, were a reminder of our own Green Bluff.

The day after the wedding, we were invited to the bride’s mother’s house for a wonderful brunch. In the shaded backyard were fruit trees: oranges, lemons, limequats and plums. It was a fruit lover’s paradise.

When we left for our trip back to Spokane, a few of the fragrant lemons were carefully tucked away in a suitcase.

Fresh fish fillets, cooked with fresh lemon slices, can’t be beat for a light June evening meal. Lemon Fish uses your choice of white fish poached in wine or broth and topped with lemon slices and seasonings.

Baked in your oven or microwave, this entree is on your table in a matter of minutes. Steam some baby carrots, cook a pot of rice and slice some melon. Serve, of course, with fresh lemon slices.

Lemon Fish

Adapted from “Quick and Healthy Recipes and Ideas” (ScaleDown)

1 pound white fish fillets (such as snapper or sole)

1/4 cup white wine or chicken broth

4-6 lemon slices

1/2 teaspoon Molly McButter or other powdered butter substitute, or 1/4 teaspoon margarine

1/8 teaspoon pepper

1 tablespoon dried parsley

Arrange fish in a 9- by 13-inch baking pan. Top with remaining ingredients. Follow directions below for microwave or conventional oven.

Microwave method: Cover with plastic wrap, venting one corner. Cook on high for 5-8 minutes (depending on thickness), rotating 1/4 turn halfway through cooking. Fish is done when it flakes easily with a fork.

Conventional oven: Preheat oven to 450 degrees. Bake fish, uncovered, for 10 minutes per inch of thickness, or until fish flakes easily with a fork.

Yield: 4 servings.
