A Reborn Reuben
One of the tradeoffs of a healthy diet is the absence of such guilty, fatty pleasures as a tangy Reuben sandwich.
Mizuna, the gourmet vegetarian restaurant in downtown Spokane, fills the gap with its Tempeh Reuben. Replacing the corned beef is a marinated, grilled patty of tempeh, a chewy, meat-like, nutrient-rich soy product.
It’s served on toasted rye bread along with organic sauerkraut, smoked mozzarella cheese (soy cheese also available), organic stoneground mustard and homemade tofu mayonnaise.
Now, let’s see what they can do with chicken fried steak.
