It’s easy to make your own spice rubs at home. Ann Wilder of Vanns Spices Ltd., a specialty spice supplier near Baltimore, suggests the following:
Fish rub: 2 tablespoons crushed fennel seeds, 1 teaspoon lemon pepper, 1 teaspoon granulated garlic, 1/2 teaspoon dried thyme, 1/2 teaspoon ground coriander.
Greek rub: 2 teaspoons dried oregano, 1 teaspoon granulated garlic, 1 teaspoon dried thyme, 1 teaspoon dried rosemary, 1/2 teaspoon black pepper, 1/4 teaspoon salt.
Mediterranean rub: 1 teaspoon toasted sesame seeds, 2 teaspoons sweet basil, 1/2 teaspoon lemon peel, 1 teaspoon coarsely ground peppercorns, 1/2 teaspoon kosher salt, 1/2 teaspoon crushed fennel seeds.
