Marvel Carlson called to recommend the hearty recipe for Spaghetti Pie as one of her favorites from the Dorothy Dean collection.

Bloomsday reminded her of this take on carbo-loading. So, Bloomies may want to clip and save it for next year’s run.

Spaghetti Pie

6 ounces spaghetti

2 eggs, beaten

1/4 cup grated Parmesan cheese

2 tablespoons butter

1/2 cup chopped onion

1/2 cup chopped green pepper

1/2 pound ground beef

1/2 pound bulk Italian sausage

1 (6-ounce) can tomato paste

1 cup water

1 cup dairy sour cream

2 cups shredded mozzarella cheese

1/4 cup sliced black olives

Break spaghetti in about 6-inch pieces; cook according to package directions. Drain; combine with eggs and Parmesan cheese. Press mixture over bottom and sides of greased 10-inch pie plate. In skillet melt butter; cook onion and green pepper until tender. Add ground beef and sausage; cook until meat is browned. Drain off fat. Stir in tomato paste and water, simmer 10 minutes. Spoon dairy sour cream over spaghetti crust; top with meat sauce, bake at 350 degrees for 25 minutes. Sprinkle with mozzarella cheese and olives; continue baking until cheese melts, about 10 minutes. Let stand 10 minutes before serving.
