Fresh Sheet: Tea company launches kickstarter campaign

Winterwoods Tea Co. in Spokane has launched a Kickstarter campaign for a commercial kitchen.

Founded in 2014, Winterwoods sells teas that use local and regional ingredients as much as possible. Owner Tirza Wibel, who mixes her 15 blends by hand, is hoping to raise $13,450 to buy equipment such as commercial scales and sealing machines, a refrigerator, oven, countertops and shelving.

Backers who pledge at least $15 will receive tea. Rewards for higher pledges include ceramic mugs and a reusable market bag. The campaign runs through Sept. 13.

Sublime sandwich-maker

Jennifer Underwood, of Spokane, placed second in the annual Sub Jammers competition.

She competed against more than 100 sandwich artists from around the world at Subway restaurants’ annual convention in Las Vegas on Aug. 1.

Scoring was based on the time, in seconds, it took to make a sandwich. Points were subtracted for discrepancies in appearance and accuracy. 

Underwood, who finished with a score of 47, has worked at Subway for 15 years. This was her fifth time competing and second top-two finish. She won the competition in 2010.

Subway has more than 44,000 franchised locations in 110 countries.

Bread man

The outgoing head baker at Bouzies Bakery will be offering a bread subscription service while he hunts for a permanent location for his new bakeshop.

Shaun Thompson Duffy aims to establish a wood-fired, house-milled bakeshop that specializes in long fermentation breads and pastries with an emphasis on whole, local and ancient grains. Meantime, he wants to bake bread for sale and pick up, much like a community supported agriculture, or CSA, program.

Duffy decided to leave Bouzies after the bakery ended its wholesale accounts and farmers market appearances to focus on in-restaurant retail production at Luna. Email him at culturebreads@gmail.com.

Farm to Fork

Coeur d’Alene Casino is hosting its first Farm-to-Fork event on Sunday.

There’s a farmers market from 10 a.m. to 2 p.m., followed by a cooking demonstration at 3 p.m. by celebrity chef Hugh Acheson.

Acheson was named a Best New Chef by Food & Wine Magazine in 2002. In 2012, he was a James Beard Award winner for Best Chef Southeast. Hugh competed in season three of Bravo’s “Top Chef Masters” and now is a judge on “Top Chef.”
