Clover hosts wine dinner
Clover is hosting a wine dinner Jan. 25.
The multi-course meal is $69 per person and starts at 6:30 p.m. Seating is limited. Make a reservation by calling (509) 487-2937.
The dinner features cuisine from Clover, which is partnering with wine specialist Matt Dolan of Spokane’s Rocket Market and Tristan Ohms of Vinea Imports in Seattle.
Here are the pairings:
Flama d’Or Cava Brut NV with citrus-cured butterfish, green apple gel, speck, orange blossom powder and Honeycrisp apple relish
Tomas Cusine Drac Magic Blanco 2014 with Bacalao and butterball potato croquette, piquillo chili coulis, frisee, olive, boquerone and preserved lemon
Carramimbre Verdejo 2014 with lobster salad, spiced pear, cucumber and a pine nut chili-mango sphere
Vina Cerrada Crianza 2011 with braised rabbit cavatelli, marsala, mushroom, hazelnut, orange and olive powder
Marques de Valdueza “The Bird” 2012 with braised lamb leg agridulce, saffron and chorizo risotto, glazed carrot and gremolata
Vina Santa Maria Late Harvest Viognier 2011 with a brown butter crepe, blood orange and Asian pear marmalade, white chocolate, Nutella, candied hazelnut and foie snow
