Dishing Recipes For Good Cause

It may sound like an old movie, but “Guess Who’s Coming to Dinner?” is actually a new cookbook from The Arc of Spokane to benefit people with developmental disabilities.

Along with recipes from home cooks involved in the organization, the book includes such local restaurant specialties as Lindaman’s Granola Muffins; Paprika’s Warm Duck Salad With Strawberries and Wild Rice; Cyrus O’Leary’s Cream of Tomato Soup; Luigi’s Chicken and Vegetable Primavera; Beverly’s Firecracker Prawns With Angel Hair Pasta and Ivano’s Dark Chocolate Mousse.

The cookbook costs $10. It’s available at Rosauers supermarkets in Spokane, Huckleberry’s Fresh Markets, Bountiful Fresh Foods and at The Arc, 127 W. Boone.

Huckleberry’s is bringing in some special guests to celebrate Thursday’s opening of its Spokane Valley store at Sprague and Sullivan.

Mel Coleman, a fourth-generation Colorado rancher whose Coleman Natural Meats is the nation’s largest producer of certified beef and lamb, will discuss cooking with all-natural meats at the Valley store on Thursday from 11 a.m. to 4 p.m. Coleman also will appear at the South Hill Huckleberry’s, Ninth and Monroe, during the same hours on Friday.

Jennifer Davis, food editor of Delicious! magazine, will present a cooking demonstration and share tips for creating flavorful dishes with natural and organic ingredients at the South Hill store on Thursday from 3 p.m. to 7 p.m., and at the Valley store on Friday from 1 p.m. to 4 p.m.
