Magazines Predict Food Trends

Want to buy a crystal ball, cheap? Then hit your local newsstand, where food magazines are full of predictions about what will excite us, sustain us and preoccupy us for the next 12 months.

We culled the following forecasts from Food & Wine and Bon Appetit:

The big news: Fat is back. Eeek!

Raw foods. Bury your food-safety fear in tartares, ceviches and carpaccios.

Iceberg lettuce. Food & Wine offers no explanation and also says microgreens - sprouts of beets, basil and rapini - will enrapture us in ‘99. Bon Appetit points to greens like mustard, spinach, kale and chard.

Savory custards, French crepes, Belgian waffles.

Veal and Argentinean beef. Oh, and fancy steaks.

Miniature desserts - think petit fours. Homey desserts - think cobbler. Flourless chocolate cake - think nap.

Chinese soup spoons as fancy hors d’oeuvre holders.

Caramelizing vegetables and meats - a natural offshoot of the roasting rage.

Nuevo Latino, plus Greek and Indian.

Blue, in dinnerware, says Bon Appetit. White, in dinnerware, table linens and restaurant decor, says Food & Wine.

So what’s out? Mesclun, truffle oil, big scones, big-big coffee cups, angel-food-cake muffins and squeeze bottles for decorating plates.
