Dear Heloise: When in a hurry to make soup or a casserole and one of the ingredients is cut-up potatoes, the frozen Southern or chunk-style hash browns work great.
They are perfect for someone who does not use enough potatoes to keep them on hand, as they keep a long time in the freezer and can be divided into small portions and be put in plastic bags and they will be ready to use.
