KFC Cole Slaw popular cloned recipe
Dear Readers: After the story in last week’s edition about cookbook author Todd Wilbur, who clones snack food and restaurant recipes, I got a call from Shirley Emerson of Spokane. She was searching for Wilbur’s clone of KFC’s Cole Slaw from his book “Top Secret Recipes.”
According to Wilbur’s Web site, www.topsecretrecipes.com, his KFC Cole Slaw has become one of the most copied and pasted recipes from his first book on the Internet. It was among the recipes Wilbur offers free on his Web site.
Here you go, Shirley.
KFC Cole Slaw
1/2 cup mayonnaise
1/3 cup granulated sugar
1/4 cup milk
1/4 cup buttermilk
2 1/2 tablespoons lemon juice
1 1/2 tablespoons white vinegar
1/2 teaspoon salt
1/8 teaspoon black pepper
8 cups finely chopped cabbage (about 1 head)
1/4 cup shredded carrot (1 medium carrot)
2 tablespoons minced onion
Be sure the cabbage and carrots are chopped up into very fine pieces (about the size of rice). Combine the mayonnaise, sugar, milk, buttermilk, lemon juice, vinegar, salt and pepper in a large bowl and beat until smooth.
Add the cabbage, carrots and onion and mix well.
Cover and refrigerate for at least 2 hours before serving.
Yield: 10 to 12 servings
Nutrition per serving: 160 calories, 11.6 grams fat (2 grams saturated, 63 percent fat calories), 2 grams protein, 14 grams carbohydrate, 8 milligrams cholesterol, 2 grams dietary fiber, 251 milligrams sodium.
Dear Cook’s Notebook: One of your recipes in this morning’s paper called for unsweetened coconut. I have tried several different places and have been unable to find (it). Can you tell me where I might find this product? Thank you. Dottie Blosser
Dear Dottie: I have had luck finding shredded unsweetened coconut at natural food stores in the bulk bins. Huckleberry’s Natural Market and Pilgrim’s Natural Food Market in Coeur d’Alene both carry it.
Most recently, I’ve found Bob’s Red Mill brand unsweetened shredded coconut at Yoke’s, Rosauers and Fred Meyer stores. (Look on the display with the other Bob’s Red Mill products.) It can also be purchased online at Amazon.com. You have to buy quite a bit, however. Four 24-ounce packages of Bob’s Red Mill are on sale right now for $16.43.
