Sonnenberg’s Market, the oldest meat market in Spokane (under various ownerships), has had 3,000 pounds of well-trimmed brisket soaking in a special brine solution for the past six weeks.

The 55-year-old recipe produces a mild, pleasantly seasoned meat that’s perfect for pairing with potatoes and cabbage.

And maybe best of all, it doesn’t take a whole lot of green to get it.
