U.S. Department of Agriculture Meat and Poultry Hotline (800) 535-4555): Personal assistance weekdays 7 a.m. to 1 p.m., Thanksgiving Day 5-11 a.m. (automated service available 24 hours a day).

Foster Farms Turkey Helpline (800) 255-7227): Open 24 hours, seven days a week from Thursday through Nov. 29 (or visit www.fosterfarms.com).

Reynolds Turkey Tips Line (800) 745-4000): 24-hour recorded instructions for various turkey cooking methods (or visit www.reynoldskitchens.com).

Shady Brook Farms Dial-A-Chef Holiday Hotline (888) 723-4468): Recorded turkey recipes and tips from celebrity chefs (or visit www.dialachef.com).

The National Turkey Federation (www.eatturkey.com), Cook’s Illustrated (www.turkeyhelp.com), Honeysuckle White (www.HoneysuckleWhite.com), StarChefs (www.starchefs.com) and Cooking.com (www.cooking.com) are among other Web sites with information on turkey roasting options.
