Sour Cream Lemon Pie

1 cup sugar

3-1/2 tablespoons cornstarch

1 tablespoon lemon rind, grated

1/2 cup fresh lemon juice

3 egg yolks, slightly beaten

1 cup milk

1/4 cup butter

1 cup sour cream

1 baked 9-inch pie shell

1 cup whipping cream, whipped

Lemon twists for garnish

Combine sugar, cornstarch, lemon rind, juice, egg yolks and milk in heavy saucepan; cook over medium heat until thick. Stir in butter and cool mixture to room temperature. Stir in sour cream and pour filling into pie shell. Cover with whipped cream and garnish with lemon twists. Refrigerate leftover pie.

Yield: 8 servings.

Nutrition information per serving: 397 calories, 25 grams fat (56 percent fat calories), 4 grams protein, 41 grams carbohydrate, 131 milligrams cholesterol, less than 1 gram dietary fiber, 200 milligrams sodium.

Dear Kandis: I need rescuing. I have misplaced my only copy of a favorite salad, Cinnamon Swirl Salad. Ingredients, as I remember, are lemon Jell-O, applesauce, cream cheese and red-hot cinnamon candies. Thank you for your help. - Maxine H., Liberty Lake

Dear Maxine: I found a recipe that has the same ingedients, including either grated apples or applesauce. If you use grated apples you get a slightly different texture. I hope it works for you.

Cinnamon Salad

From Family Classics Cookbook

1 large package lemon Jell-O

3/4 cup hot cinnamon candies (red hots)

3-1/2 cups boiling water

3 grated apples or 1 cup applesauce

1/2 pint whipping cream, whipped

2 small packages cream cheese

Dissolve Jell-O and candies in boiling water. When cool, add grated apples or applesauce. Mix whipping cream and cream cheese until smooth. When Jell-O mixture is slightly set, add whipping cream and cream cheese. This cream mixture can be folded into the JellO mix or you can layer the cream mixture with the Jell-O. This makes a 9- by 13-inch salad.

Yield: 15 servings.
