Fresh Sheet: Throwback holiday dinners

Dorothy Dean was a pseudonym for newspaper’s home economics department from 1935 to 1983.

The Spokesman-Review discontinued the service more than 30 years ago, but readers still call to track down recipes from the popular leaflets.

Back to James Beard House

Chef Jeremy Hansen and a team from Santé Restaurant & Charcuterie will cook at the prestigious James Beard House in New York City for the second time in two years.

Hansen, owner of the restaurant with wife Kate, has been invited to the former Greenwich Village townhouse of the namesake writer, teacher and cookbook author. It’s now home to the nonprofit James Beard Foundation, a culinary arts organization designed to “celebrate, preserve and nurture America’s culinary heritage and future.”

Hansen, along with a crew from Santé, will present a meal in March. They last prepared a meal there in August 2013 after running a successful Kickstarter campaign to send a team of about 10. This time, they don’t plan to raise money via the crowd-funding site, but will invite staff members to come on their own, Kate Hansen said.

Meantime, they’ve come up with a concept but are still “doing sketches” and finalizing the menu. “It’s pretty much up to us how many courses and the extent of how big or small we want it to be,” Kate Hansen said. “We are so excited. It’s just awesome.”

Liquid nitrogen holiday treats

A Spokane Community College instructor and pastry chef will share his expertise using liquid nitrogen to make holiday sweets in a new Fire & Ice cooking class.

Bob Lombardi used the technique as a second-place finisher on this year’s “Halloween Wars” on Food Network.

The class costs $59 and takes place from 6 to 8 tonight in Building 1 at SCC, 1810 N. Greene St.
