Build a better burger

Manito Tap House and Santé Restaurant and Charcuterie are participating in the James Beard Foundation’s Better Burger Project.

The contest challenges chefs to create a “better burger” by blending ground meat with finely chopped mushrooms for a healthier burger with reduced calories, fat and sodium.

Santé chef and owner Jeremy Hansen is using a mixture of Wagyu beef from Montana’s Thompson River Ranch and crimini, portobello and oyster mushrooms. The burger also has house-cured bacon, mustard, mornay sauce, shredded cheddar, butter lettuce, grilled onions and morel mushrooms on a ciabatta bun from Common Crumb Bakery.

Manito Tap House chef Molly Patrick is spotlighting the Buffalo & Change burger with ground buffalo, king trumpet mushrooms, rhubarb jam and toasted almond butter on a toasted brioche bun.

The burgers are available through July 31. Santé is at 404 W. Main Ave. Manito Tap House is at 3011 S. Grand Blvd.

Diners are invited to support their favorite in an Instagram-based contest using the hashtag #betterburgerproject, handle of the restaurant or chef and photo of the burger.

The five chefs with the most #betterburgerproject Instagram uploads will win a trip to New York City in October to cook their “better burger” at the James Beard House. On the Web: betterburgerproject.org.
