Coffee cake meets a camping trip in Crater Cake, a creative concoction first made by a beloved stepmother more than 40 years ago.

Today, it remains a favorite of Betty Peters, who shares the family recipe in this month’s “In the Kitchen with … ” feature. She still makes Crater Cake a couple of times each year.

The name comes from the toasted marshmallows on top. They puff up during baking then quickly collapse, creating a kind of moonscape on the surface of the coffee cake.
