You could call Heidi’s pancake mixes a cottage industry - a cottage cheese industry, that is.

The Coeur d’Alene company started with a cottage cheese pancake mix that comes ready to add cottage cheese and eggs, resulting in a moist cake similar to a cheese blintz. Today, mixes also are available in sourdough, Oats ‘n’ Apple and blue cornmeal Blue Moon varieties.

Price: $2.50 to $3 for 12 ounces.
