Coca-Cola Flavors This Baked Ham

Dear Nancy: The recipe for this ham comes from my friend from Atlanta who insists that the real secret to a great ham is the Coca-Cola.
Coca Cola Baked Ham For best results, don’t substitute other colas for Coca-Cola. Caffeine-free or diet Coke won’t work at all.
1 (3 pound) ham
1/4 cup Dijon mustard
8 whole cloves
1/4 cup maple syrup
1/2 cup orange marmalade or peach preserves
1 cup red wine
1/3 cup Coca-Cola
2 tablespoons cider vinegar
Preheat oven to 350 degrees. Line baking pan with foil. Place ham in pan. Coat with mustard and insert cloves. Mix syrup and preserves together and spread on ham. Mix wine, cola and vinegar; pour over ham and bake for 1 hour, basting often. Remove ham and let it set for 10-15 minutes, then serve.
Yield: 6 servings.
Nutrition per serving: 394 calories, 10 grams fat, (23 percent fat calories), 44 grams protein, 25 grams carbohydrate, 94 milligrams cholesterol, less than 1 gram dietary fiber, 2525 milligrams sodium.

Dear Gloria: This salad is an old family favorite. It brightens up any special occasion dinner.
Salad of Venue From Lucille Costanzo
2 small packages raspberry gelatin
2 cups very hot water
1/2 cup mayonnaise
2 (3 ounce) packages cream cheese
1 (20 ounce) can crushed pineapple
1 cup shredded baker’s coconut
1 cup chopped pecans
1 pint whipping cream
Dissolve gelatin in hot water, chill until slightly thick. Blend mayonnaise, cream cheese, pineapple, coconut and nuts. Fold in just before gelatin begins to set. Fold in whipped cream. Spoon into a 2 cup mold or flat dish and refrigerate until firmly set.
Yield: 12 servings.
