The U.S. Department of Agriculture urges consumers to test the internal temperature of meats with a thermometer when cooking, and to make sure fish and shellfish are cooked through before eating.

Recommended minimum internal temperatures:

Ground meat: 160 degrees

Beef roasts, steaks and chops: 145 degrees

Pork roasts, steaks and chops: 160 degrees

Chicken or turkey, whole: 180 degrees

Chicken or turkey, breasts: 170 degrees

California growers expect to harvest a record crop of 205 million pounds of pistachios this season. Try this recipe from the California Pistachio Commission: Combine the juice from one orange, 1 tablespoon packed brown sugar, 2 teaspoons of lemon juice and 1/4 teaspoon ground cinnamon. Pour over two peeled and sliced oranges, 2 cored and sliced pears dipped in lemon juice and 3/4 cup red seedless grapes. Chill at least 2 hours and top with 1/4 cup pistachios before serving. Makes 6 servings.
